The Heat is On! No Bake Cookies

Okay, so it’s official: Summer is finally here! With temperatures rising into the 90s in New York these days, TRB cannot even think about turning on the oven! So, what to do when that craving for a sweet treat hits while the mercury continues to rise? How about a “no bake” cookie recipe?

Yes, that’s right. TRB said “no bake.”


This idea actually comes from Anna, a loyal reader, who is looking for cookie recipes that will cater to a wheat allergy. At the same time, she also needs something that’s “dorm-friendly.” So, while TRB often posts gluten-free options, no bake cookies are definitely the way to go in Anna’s case due to her lack of an available oven.

Since the cookies will not be baked, it’s important to ensure that your recipe contains a significant binding agent. A quick look around the Web found that most no bake cookie recipes contain peanut butter, corn syrup, maple syrup or another heavy thickener such as evaporated milk.

Since Anna specifically mentioned oats in her request for assistance — and since we all pretty much *love* anything chocolate — here is a pretty healthy, Vegan recipe from allrecipes.com:

No Bake Chocolate Oatmeal Cookies
2/3 cup maple syrup
1/4 cup vegetable oil
5 tablespoons unsweetened cocoa powder
1 teaspoon ground cinnamon
1/2 cup peanut butter
1 cup rolled oats
1 teaspoon vanilla extract
  • In a saucepan over medium heat combine the maple syrup, oil, cocoa and cinnamon. Boil for three minutes, stirring constantly. Remove from heat and stir in the peanut butter, rolled oats and vanilla until well blended. Drop by heaping spoonfuls onto waxed paper and chill to set, about 30 minutes.
