When TRB gets together with her best girlfriends, it’s often an adventure in healthy eating. Trying to satisfy cravings in the face of gluten-free, lactose intolerant and vegan dietary restrictions has become a fun challenge. In that spirit, TRB took on the task of creating a gluten-free version of an old classic: Nestlé Toll House Chocolate Chip Cookies
As faithful readers know, TRB is probably the biggest fan *ever* of Nestlé’s Toll House recipe. And, now, we can say with confidence that it’s even fantastic gluten-free.
Following the recipe, simply substitute 1 1/2 cups of brown rice flour and 1 1/2 cups of potato flour for the all purpose flour. All other ingredients remain unchanged. You may find that the dough has a sand-like consistency. If so, add a few tablespoons of water and mix. Bake according to recipe directions.
