It’s a brand new year, and what better time to hop back on the wagon and get in shape after all of that holiday binging? TRB has been on quite the health kick lately – a high cholesterol reading is usually enough to scare anyone “straight,” and TRB is no different! In general, cutting butter, unnatural sugars, foods high in fat and most dairy products from the diet are all helping the pounds to just drop off. Add to that, a lot of walking on the (long, long, long) commute each day and kickboxing three times a week, and you have a recipe for weight loss success.
The Lighter Side: Cranberry, White Chocolate and Oat No Bake Cookies and Banana "Ice Cream"
But even TRB misses her sweets – so, this year, you’ll see some more experimenting in an effort to lighten up tried and true favorites, as well as recipes for healthy, yet satisfying alternatives to traditional desserts to quell that sweet tooth, while trying to be good.
In that spirit, here’s a new take on No Bake Cookies. You may remember this recipe from last summer, when it was way too hot to put the oven on. Now, they’re serving as a great sweet treat substitute because butter and unnatural sugars are not found on the list of ingredients.
Cranberry, White Chocolate and Oat No Bake Cookies
1/4 cup vegetable oil
1/3 cup honey
1/3 cup maple syrup
1 tbsp vanilla extract
2 and 1/2 tbsp natural peanut butter
1 and 1/2 cups rolled oats (not the quick cooking kind!)
1/4 cup white chocolate chips
1/4 cup dried cranberries
1. In a saucepan, bring the vegetable oil, honey, maple syrup and vanilla to a boil. Stir constantly for 3 minutes. Remove from heat. Add peanut butter to heated mixture and blend.
3. Add rolled oats and incorporate. Add cranberries and white chocolate and just combine.
4. Drop rounded teaspoons of the mixture on a baking sheet lined with wax paper. Refrigerate for at least 30 minutes and then enjoy!

With just three ingredients – frozen bananas, peanut butter (TRB used natural PB) and honey, “ice cream” doesn’t get much simpler – or healthier – than this!

What a neat cookie. I’m going to have to give this a try.
They are delish – and I totally made them up! You can incorporate your favorite flavors – dried cherries and dark chocolate chunks might make for a nice combo too!
P.S. After these white chocolate-cranberry goodies were gone, I whipped up a batch with milk chocolate chunks – sooooo good! And, yes, they are almost gone! :(
