Here’s to hoping you enjoyed a wonderful Thanksgiving with your family this past (long!) weekend. TRB spent the holiday with her family, devouring a turkey and all of the trimmings. But what Thanksgiving would be complete without the traditional desserts?!!
1 1/2 c. flour
1 c. sugar
1/2 tsp
1/2 tsp
1/4 tsp kosher salt
2 large eggs
3/4 c whole milk
1/2 c olive oil
2 tsp orange zest*
1. Preheat oven to 325. Oil and flour a 9-inch loaf pan. Whisk first 5 ingredients in a large bowl.
2. In another bowl, whisk eggs, milk, olive oil and orange zest to blend. Gradually whisk this into the flour mixture. Scrape into your loaf pan.
3. Bake about 60-65 minutes* or until a tester inserted in the center of the cake comes out clean. Cool in pan, on rack, for 20 minutes, then cool completely on rack.
(*TRB substituted lemon zest for the orange in this recipe; the baking time was also reduced by 10 minutes).
Yum! That olive oil cake was delicious! I could eat it for breakfast lunch and dinner!
So glad you enjoyed it! It’s definitely a “keeper!”
Thanks for all the recipes, really look forward to trying the olive bread, sounds good and easy for a non-baker to make.
It is! Good luck and please let us know how it turns out! :)
