Special Guest Post: Cookies ‘n Cream Brownies

Please don’t hate me. I know, I know – being “busy” isn’t an excuse for slowing down on posting delightful, delectable and delicious dessert recipes, but you’ve got to trust me – it’s been crazy busy. Tons of fall birthdays, my sisters’ upcoming weddings and year-end activities at work have completely sucked me in. Speaking of sisters, Laura decided to help out with another Special Guest Post as I attempt to come up for air. This time, she’s made scrumptious brownies with two of my all-time favorite ingredients – Oreo cookies and Cookies ‘n Cream ice cream. (Yes, ice cream. In brownies. Check out the recipe below. It really works). I’m so proud that Laura’s jumping into baking with such passion and enthusiasm; she’s really starting to remind me of, well, me. I was so inspired by the positive feedback on my Self-Frosting Nutella Cupcakes – my fiancé nearly ate the whole tray! – that I decided to give baking a second try with a “new-to-me” recipe. (Of course, *all* recipes are new to ME!) I learned of these Cookies ‘n Cream Oreo Fudge Brownies from my co-worker, Stephanie, who lovingly renamed them “The Chocolate Heart Attack.” The recipe, which was adapted from an original one by Kevin and Amanda, is really easy to make – even for a novice baker like me. 

Cookies ‘n Cream Brownies
(Adapted from Kevin and Amanda)

1 box of brownie mix 
Large eggs and vegetable oil (this will vary according to the directions on the box)
16 Oreo cookies
1/2 cup Cookies ‘n Cream ice cream
1/2 cup hot fudge topping at room temperature

1. Preheat the oven to the temperature indicated on the box of brownies. Prepare an 8×8 pan. 

2. Combine brownie mix, eggs and oil in a large bowl. Add a generous 1/2 cup of the ice cream and hot fudge topping. (New Baker Tip: If the ice cream is too cold, the batter can be difficult to mix, so be sure to let it thaw to room temperature before using. For maximum fun, be sure to lick all spoons clean. And, maybe have an extra spoonful – or two – or four – of the ice cream). 

3. Pour half of the brownie batter into the pan and smooth. Add a layer of Oreo cookies, then pour the remaining batter on top. Bake for 35-40 minutes. (While the brownies bake, feel free to indulge in the leftover Oreos. As you can see, I certainly did!)

4. Remove the brownie from oven, cool and slice. Enjoy!
